Summer parties and back to school and too many zucchinis. Try these Zucchini Fries with Sriracha Aioli!Β  You can eat them hot, or add them to a salad the next day. Here is a simple and easy recipe – Lively Life’s Zucchini Fries that mixes many of our comfort foods.

For the Dip – use Mayonnaise and sriracha sauce.Β 

MAYONNAISE

Egg-free? Yes there are options in the grocery store or online now.

Egg Mayonnaise – please start to look for Mayonnaise with avocado oil or olive oil (healthy fats) andΒ  buy full fat not light! Eat Mayonnaise in small amounts since its high calories.Β 

WHY NOT CANOLA OIL? normal Mayonnaise is typically canola oil (Rapeseed oilΒ  – Vegetable oil) that is GMO, most is extracted with a hexane solvent and the heat turns is rancid, destroys omega-3s and creates trans fats. This causes inflammation. There is “cold-pressed” canola oil that is expensive and not used in mayonnaise.

WHY NOT LIGHT? Light MayonnaiseΒ  often contains added sugar or carbs to maintain texture, and additives like food starch, gums and others not found in regular mayonnaise.Β 

Which diet is this Zucchini Fries with Sriracha Aioli suitable for?

Vegan – You can buy plant-based or vegan mayo instead of regular mayo for the dip or use another dip.

Gluten-free – Yes

Dairy-free – Yes

Egg – For the dip – You can buy plant-based or vegan mayo instead of regular mayo.

Nut-free – no – we are using almond flour for coating. You can use no almond flour.

How to store Zucchini Fries with Sriracha Aioli?

Better to eat when just out of the oven! You can use with salads or on their own – but store with a paper towel cause zucchini’s are moist.

How to make this Zucchini Fries with Sriracha Aioli fool proof?

  1. Slice and salt fries, let them stand for 10 min or more. You will see water come off them. Use a paper towel or clean towel to dry them.
  2. Use two ziploc bags or use a bowl with a lid to put the almond flour and spices onto the zucchini fries. Use half the fries in the first bag. Then the second half of the fries in the second bag or dry out first bowl with lid and reuse.

Zucchini Fries with Sriracha Aioli

Zucchini season is on and this is a quick and delicious recipe that people will love. Enjoy!
Coating makes it extra special – and so good out of the oven. I love to eat leftovers with salad, or straight. Add a paper towel when storing them to keep them a little crisp.
Prep Time 15 minutes
Cook Time 20 minutes
Resting Time if salting zucchini prior 20 minutes
Total Time 55 minutes

Ingredients
  

Slice zucchinis like pic and add salt to dehydrate zucchini for 10-20 min. If in a hurry – miss this part.

  • 3 zucchinis

Mix coating and split half of coating into two ziploc bags or two bowls with lids. Mix half the fries in each container.

  • 3/4 cup almond flour
  • 2 tsp garlic powder
  • 2 tsp paprika

Sriracha Aioli – Mix all ingredients to taste

  • 3 tbsp mayonnaise Choose with olive oil or vegan mayo.
  • Sriracha to taste. MIX
  • lime juice – a squeeze optional

Instructions
 

  • Preheat oven at 375oF or 190oC.
  • Slice zucchini and add salt. Let sit for 10-20 min and dry off with clean towel or paper towel.
  • Make coating – and add half to each two ziplocs or two bowls with lids.
  • Take half the zucchinis into each container and shake to coat.
  • Bake on parchment paper or a rake – 375oF or 190oC for 30 min. No flipping required if on a rake.
