(Peanut) Almond Butter Eggs or Cookies

Healthy copycat Reeces Butter Cups - use almond or peanut butter.
Gluten-free and Dairy Free using dark chocolate.
We use almond flour to use less nut butter and make them tasty, healthy fats and protein! Nutrient dense and vegan too.
Choose healthy nut butters that do not contain hydrogenated fats - just nuts are better.

Ingredients
  

Nut Butter Middle

  • 1/2 cup almond butter or just nuts peanut butter
  • 1 cup almond glour
  • 3 pinches sea salt or himalayan salt
  • 1 tbsp maple syrup add an extra tbsp if you want sweeter
  • 1 tsp tsp pure vanilla extract

Mix together.

  • 1/3 cup pecan pieces optional

Mix. Form Eggs or circles, place on tray and freeze for 20-40 minutes.

Chocolate shell

  • 1/2 cup chocolate chips or dark chocolate bar
  • 2 tsp coconut oil
  • 2 pinches sea salt or himalayan salt

Instructions
 

Nut Butter Middle

  • Mix nut butter, almond flour, salt, maple syrup, vanilla extract together with flat whisk, fork or by hand.
  • Add 1/3 cup of pecans if you like crunchy and mix.
  • Place parchment paper on cookie tray. Form eggs or circles with mix than place on cookie tray. Freeze for 20 to 40 min.

Dark Chocolate Goodness.

  • Use microwave (20 sec and stir, repeat if needed) or double boiler method - Start a small pot of 1.5-2 cups of water boiling.
  • In a small glass Pyrex measuring cup put the dark chocolate and coconut oil.
  • Place the Pyrex measuring cup in the boiling water pot as a double boiler. Stir while it is melting.
  • Once melted add the last salt amount in the ingredients.
  • Take the balls out of the freezer and drop one at a time into the Pyrex measuring cup and rotate the ball or use a spoon to cover it with chocolate. Take it out and place it back on the parchment paper. Do this for each ball.
  • OPTIONAL: Then using the spoon drizzle the last bit of chocolate by moving your spoon quickly over the balls to give it an additional trace or line appearance.
  • Sprinkle with Himalayan salt. Put back in Freezer. Store in freezer till you want to eat them. Enjoy and Happy Easter!!
