Oatmeal Chocolate Chip Tahini Cookie
You will love the flavor and how delicious and easy to make - the biggest trick is how sticky the dough is! NO refined sugar, flour or butter ----> instead we use tahini and maple syrup. Tahini is a good fat and protein that along with oatmeal and cinnamon help balance blood sugar.

Wet ingredients - Mix first
- 6 tbsp tahini
- 1/4 cup maple syrup
- 2 tsp cinnamon
- 1 tsp pure vanilla extract
- 1/4 tsp sea or himalayan salt
Now add dry ingredients to wet ingredients
- 1 1/2 cup oatmeal (large flakes) Use Gluten Free Oats if you are doing Gluten Free.
- 2 tbsp mini chips (Enjoy Life) or cacao nibs
Preheat oven to 350F.
In a Medium bowl - Add all wet ingredients together and mix.
Add dry ingredients to wet ingredients and mix.
Put parchment paper on cookie sheet.
Roll dough into ball and place on parchment paper. Flatten down with fingers or wet fork slowly to about 1/2 inch.
For 1 tsp size ball, bake for 8 min.
For 1 tbsp size ball, bake for 10 min.
