Halloween Spider Avocado Deviled Eggs (Mayo option)

Halloween Eggs - a healthy treat for halloween and so many of us love deviled eggs.
Make with avocados - or substitute mayo (for 10 eggs use 5 tbsp, for 6 eggs use 3 tbsp of mayo and no avocado)

Ingredients
  

  • 10 boiled eggs Boil for 10 min

Mix with yolks:

  • 1.5 avocados
  • 1/2 lime or 2 tsp Apple Cider Vinegar
  • 2 tsp dijon mustard
  • pepper and salt to taste
  • sprinkle with paprika for red fun effect.

Add Spiders!!!

  • Black Olives

Instructions
 

  • Boil eggs
  • Can put in ice bath ----> some say it helps when shelling the eggs. You can make them a few days early and put them in the fridge till you are ready to make them
  • When eggs cool, take shells off. Cut in half - use clean knife. Put the whites aside.

Yolk Mix

  • Use a fork to mash all ingredients together: Yolks only, avocado (or mayo), lime or ACV, mustard and seasoning.

Creating the Spider eggs!

  • With a spoon dollop the yolk mix into the white halves.
  • Take black olives (I bought sliced ones - so I had to put together what looks like an olive for the spider body then slice the sliced olives then cut in half to make legs, legs, legs!). Assemble - play some music while doing this - it takes time and patience.
  • Sprinkle with paprika!
