Preheat oven at 350oF
In a large bowl add all ingredients including spices and optional green chiles. MIX by hand
- 2 lb ground beef
- 1/2 cup almond flour
- 2 eggs
- 1/2 onion diced - finely ~3/4 cup
- 1/2 cup carrots grated ~1 large carrot
- 1/2 cup zucchini grated- less than 1 zucchini
- 3 cloves garlic minced
SPICES
- 2 tsp fennel
- 1 tsp sea salt or himalayan salt
- 2 tsp oregano
- 2 tsp cumin
- 2 tsp ground coriander seed optional
Additional tang!
- 1 can green chiles 7oz - optional but great
PICK YOUR SAUCE - Sauces made when Meatloaf is baking for the first 30 min.
Sauce #1 - smooth sauce
- 1/2 onion diced - finely ~1/2 to 3/4 cup
- 2 cloves garlic minced
- 1 can tomato sauce 14,5 oz
- 2 tbsp water rinse can and put into sauce
- 2 tsp paprika
- 1 tsp Dijon mustard
- 2 tsp coconut aminos
Sauce #2 - chucky sauce with spice!
- 1/2 tsp cinammon
- 2 cloves garlic minced
- 1/2 onion diced - finely ~1/2 - 3/4 cup
- 1 can diced tomatoes 14.5 oz.
- 2 tbsp water rinse can with water and put into sauce
- 2 tsp balsamic vinegar
- 1/4 tsp smoked paprika
- 1/4 tsp clove
