3 Ingredient Banana Pancakes (with additional options)

Make  banana pancakes, pretend like it's the weekend now! (Reference Jack Johnson).
The best banana pancakes I ever had was in San Francisco - I am not a go out for breakfast girl. I prefer to stay in - and make my own breakfast. I add in additional fiber - how to make these more like the San Francisco banana pancake dream!

Ingredients
  

  • 2 ripe bananas
  • 1 eggs
  • 1 cup oats

OPTIONAL! Additional Ingredients in Pancake mix

  • 1/2 cup nut milk or other milk - I used almond milk (I like thin pancakes)
  • 1/2 tsp baking powder
  • 1/2 tsp pure vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt or himalayan salt

ADDITIONAL - Want for fiber!!!

  • 2 tbsp grinded seeds - flax, chia, hemp mix with sesame, flax, chia
  • 1/4 cup pecan pieces
  • 1 banana sliced SO good to have the extra banana and pecan pieces - this will make it more like the San Francisco dream banana pancakes

Toppings

  • maple syrup Yes - I have Canadian 🍁 origins - so this is included!!!
  • nuts
  • coconut butter
  • butter grass-fed for higher omega 3 and K2
  • nut butter
  • cottage cheese ~ full fat
  • plain yogurt ~ do not buy flavored yogurt, too much sugar.

Instructions
 

  • Grind Oats into oat flour in a food processor, or I use my blendtec small blender that acts as a food processor.
  • Mix all ingredients (just the three or add the additional ingredients too for mix) into one bowl. Use a whisk or fork to mix.
  • Put stove on medium heat.
  • Use a non-stick pan or cast iron (more butter/ avocado oil needed). I use half butter and half avocado oil for frying pancakes.
  • Make them smaller like 3 inch diameter (8 cm)
  • Make 8 to 10 pancakes.
