Sweet Potato Brownies!

Sweet potato combined in this dessert reduces sugar, but not the taste! This dessert is a real winner: it helps with chocolate craving, a dessert craving but without the sugar! And it’s nutrient dense. I use Cacao powder that is a superfood full of magnesium, iron, potassium, protein, yes I said protein! and fiber that helps digestion. You can use carob powder or cocoa powder as a replacement if you don’t have cacao powder. Please do look into getting this superfood.

Both Cacao and sweet potato are anti-inflammatory, anti-oxidants (think anti-aging, anti-disease forming by combating free radicals!).

Sweet Potato Brownies

These are so delicious and nutrient dense - and a dessert!

Ingredients
  

  • 1 1/2 cup sweet potato Roast cut in half, at 375F for 20-25 min
  • 1/2 cup almond butter Purchase or I make my almond butter in my blendtec, almonds with a touch of grapeseed oil.
  • 2 eggs
  • 1/4 cup cacao powder substitutes: carob or cocoa powder
  • 1/4 tsp baking powder
  • 2 tbsp coconut flour or substitute almond flour
  • 1 cup rolled oats Blend/ grind to make oat flour
  • 2 pinches sea salt
  • 1 tsp pure vanilla extract
  • 2 tbsp maple syrup
  • 1/4 cup small pieces of walnuts or pecans
  • 1/4 or 1/2 cup chocolate chips Sprinkle these ontop!

Instructions
 

  • Preheat oven at 375F. Note 375F used for sweet potato then reduce to 350 for brownies.
  • Cut one large or two small sweet potato(s) in half. Brush with grapeseed oil or other oil. Face down on pan. Cook for 20-25 min till soft. TIP: you can do this the night before with dinner.
  • Scoop out sweet potato. Blend in food processor or Blentec Twister till smooth.
  • Grind or Blend oats to make oat flour. Combine dry ingredients in small bowl and mix.
  • Combine wet ingredients in large blender or large bowl. Mix. Then add dry ingredients and mix.
  • Pour into 8 or 9 inch square pan or 7x11" pan
  • Sprinkle chocolate chips ontop!
  • Bake at 350F for 25-30 min.
