(Peanut) Almond Butter Eggs or Cookies

Almond or Peanut butter, almond flour, dark chocolate = vegan, gluten-free and dairy-free!







Copy-cat Reeces butter cups – with added pecans or other nuts for a crunchy treat. These can be made into the shape of an egg or circle. These have more almond flour and less sweetness than my previous Reeces Butte cup –Β Almond Easter eggs. Healthier and make me happy.

How to store (Peanut) Almond Butter Eggs or Cookies
Store in freezer in an airtight container for upto 3 months. Best stored shorter to reduce freezer burn. Take it out and decorate while frozen. Serve around 20 minutes after freezer or directly out of freezer if you like cold treat. Can store in fridge for 30 days in an air tight container.
To be honest – we eat them right out of the freezer – amazing!

How to make this (Peanut) Almond Butter Eggs or Cookies fool proof?
1. Adding the chocolate to the frozen eggs can be a little tricky. Make more chocolate/coconut oil mix if needed. Keep your fingers off – use utensils.

(Peanut) Almond Butter Eggs or Cookies
Ingredients
Nut Butter Middle
- 1/2 cup almond butter or just nuts peanut butter
- 1 cup almond glour
- 3 pinches sea salt or himalayan salt
- 1 tbsp maple syrup add an extra tbsp if you want sweeter
- 1 tsp tsp pure vanilla extract
Mix together.
- 1/3 cup pecan pieces optional
Mix. Form Eggs or circles, place on tray and freeze for 20-40 minutes.
Chocolate shell
- 1/2 cup chocolate chips or dark chocolate bar
- 2 tsp coconut oil
- 2 pinches sea salt or himalayan salt
Instructions
Nut Butter Middle
- Mix nut butter, almond flour, salt, maple syrup, vanilla extract together with flat whisk, fork or by hand.
- Add 1/3 cup of pecans if you like crunchy and mix.
- Place parchment paper on cookie tray. Form eggs or circles with mix than place on cookie tray. Freeze for 20 to 40 min.
Dark Chocolate Goodness.
- Use microwave (20 sec and stir, repeat if needed) or double boiler method – Start a small pot of 1.5-2 cups of water boiling.
- In a small glass Pyrex measuring cup put the dark chocolate and coconut oil.
- Place the Pyrex measuring cup in the boiling water pot as a double boiler. Stir while it is melting.
- Once melted add the last salt amount in the ingredients.
- Take the balls out of the freezer and drop one at a time into the Pyrex measuring cup and rotate the ball or use a spoon to cover it with chocolate. Take it out and place it back on the parchment paper. Do this for each ball.
- OPTIONAL: Then using the spoon drizzle the last bit of chocolate by moving your spoon quickly over the balls to give it an additional trace or line appearance.
- Sprinkle with Himalayan salt. Put back in Freezer. Store in freezer till you want to eat them. Enjoy and Happy Easter!!
