This Homemade Fruit Popsicle or Smoothie recipe is an easy, healthy and refreshing treat for you and your kids this summer.  These healthy popsicles are made with only 3-4 ingredients including fresh fruit, coconut milk and raw cashews in 5 minutes (plus freezing time).

I’ve made them here with frozen or fresh raspberries. In the past I have made with frozen or fresh Strawberries.

How to store Homemade Fruit Popsicle or Smoothie:

Freeze for 8 hours, use hot water to take out of popsicle mold, if wet freeze on bake pan for 30 min then transfer to ziploc bag for up to 2 months.

Homemade Fruit Popsicles and Smoothie

This Homemade Fruit Popsicles recipe is an easy, healthy and refreshing treat or snack to make for you and your kids this summer!  These healthy popsicles are made with only 5 ingredients including fresh fruit, coconut milk and raw cashews in 5 minutes (plus freezing time).
I've made them here with frozen or fresh raspberries. In the past I have made with frozen or fresh Strawberries.

Servings 4 popsicles

Equipment

  • 1 popsicle container or use ice tray for mini popsicles

Ingredients
  

  • 1/2 cup raw cashews
  • 2/3 cup raspberries fresh or frozen
  • 1 cup coconut milk 1 can has 2 cups. So double the recipe if using one can!
  • 1/2 tbsp maple syrup or honey – optional. Add to sweetness you like!

Instructions
 

  • Blend all ingredients for 60 seconds or until smooth. Enjoy as a smoothie.
  • Pour into popsicle mold (or ice tray containers if you don't have popsicle mold). Add a bonus raspberry! Add popsicle stick.
  • Place in freezer. Enjoy once frozen.
  • Remove from molds running under hot water tap till popsicle releases.
  • Enjoy! If you are saving them for later, remove the popsicles, place on baking sheet if they are wet, and place tray in freezer for 20 min.
  • Put them all in an ziploc freezer bag with no air, and enjoy them when you like!
