Healthy Oatmeal Chocolate Chip Cookies

Looking for a healthy oatmeal chocolate chip cookie that you can eat anytime of the day with high protein and delicious flavor. Here it is! This is my go to when I am craving an oatmeal chocolate chip cookie. The secret is – no refined sugar, flour or butter! These increase blood sugar. Instead it’s healthy nutrient dense tahini and maple syrup. Tahini has good fats and protein, so balances blood sugar. Add just enough maple syrup to make it a cookie.

For the holiday season – while there’s parties going one – you can make these and bring them or have them at home and eat one before you go so you feel satisfied and don’t have to eat the overly sugar treat that doesn’t make you feel well.

Oatmeal Chocolate Chip Tahini Cookie

You will love the flavor and how delicious and easy to make - the biggest trick is how sticky the dough is! NO refined sugar, flour or butter ----> instead we use tahini and maple syrup. Tahini is a good fat and protein that along with oatmeal and cinnamon help balance blood sugar.

Cook Time 8 minutes
Total Time 23 minutes
Servings 14 cookies or 22 small cookies

Ingredients
  

Wet ingredients - Mix first

  • 6 tbsp tahini
  • 1/4 cup maple syrup
  • 2 tsp cinnamon
  • 1 tsp pure vanilla extract
  • 1/4 tsp sea or himalayan salt

Now add dry ingredients to wet ingredients

  • 1 1/2 cup oatmeal (large flakes) Use Gluten Free Oats if you are doing Gluten Free.
  • 2 tbsp mini chips (Enjoy Life) or cacao nibs

Instructions
 

  • Preheat oven to 350F.
  • In a Medium bowl - Add all wet ingredients together and mix.
  • Add dry ingredients to wet ingredients and mix.
  • Put parchment paper on cookie sheet.
  • Roll dough into ball and place on parchment paper. Flatten down with fingers or wet fork slowly to about 1/2 inch.
  • For 1 tsp size ball, bake for 8 min. For 1 tbsp size ball, bake for 10 min. Watch while cooking. ENJOY!!
