Happy Thanksgiving! What goes with Thanksgiving in my mind….. hmmm that is Pumpkin!!! So I would like to share with you a new Healthy Gluten-Free Pumpkin Cookies (Vegan option) recipe with cashew icing! I have created especially for Thanksgiving left over pumpkin puree – when you are making pumpkin pie. OR just because you love pumpkins and you love cookies!

I have tested cooking these in the Rocky Mountains where the elevation makes it harder for baked goods to rise. These cookies may turn out like little muffin tops at sea level. Wow what could be better than a bunch of muffin tops!

Thanksgiving is my favourite of all holidays! Now that I live in the USA and still like to spell favourite and many other words with the u in there (being Canadian) – I get to celebrate Thanksgiving twice. What is Thanksgiving mean to me? Giving thanks, being grateful and eating pumpkin pie and cookies!

In this recipe I use Coconut palm sugar has potassium, magnesium, and sodium, which are all essential for regulating your body’s water content as well as many heart, nerve, and muscle functions. It is more sustainable then palm oil since the tree is not cut down, the sap is used from growing trees.

A Grateful Moment – Mindfulness to Reduce Stress

A Grateful Moment since it’s Thanksgiving. 2021 has been an intense year for many of us. As our minds rush to the future causing anxiety, or we may feel overwhelmed with what’s out of our control in our lives that makes us feel unsettled. Our mind may try to deal with life’s big stresses in different ways – by making us overly busy to feel in control of something (anxiety) or we may get depressed – it’s just the way we may handle stress. Using mindfulness meditation, walking or yoga can help us understand how our body is doing. Also putting down that phone, stopping scrolling and get back to being and doing what brings you joy. Like making healthy cookies! Like playing guitar, going out for a walk, playing sports or playing board games. We are all different, start doing things that bring you joy! Try putting the technology down. Let me know how it goes! I am always working at this, since our world is stressful right now with so many unknowns. This is a practice, and keep practicing!

Healthy Gluten-Free Pumpkin Cookies (Vegan Option) with Cashew Frosting (Vegan option)

Grateful Pumpkins exist! Yes I am! If you are not using the cashew icing, then add chocolate chips for more sweetness.

Ingredients
  

Dry ingredients

  • 1 cup gluten free flour I use Bob's all purpose gluten free flour, I prefer it! More protein grains used.
  • 1/3 cup coconut palm sugar makes cookies brown and delicious
  • 1 /4 tsp baking soda
  • 3/4 tsp baking powder
  • 1 tsp cinnamon OR 2 tsp of pumpkin spice instead of these spices
  • 1/2 tsp ginger
  • 1/4 tsp all spice
  • 1/4 tsp cloves or nutmeg
  • 1/4 tsp sea salt

Wet Ingredients

  • 1 egg or 1 tbsp ground flaxseed + 3 tbsp of warm water, whisk together
  • 1 tsp pure vanilla extract
  • 1/2 cup pumpkin puree can or make it - how to link above

OPTIONAL ITEMS

  • 2 tbsp soft coconut oil or room temp. butter (I made it without, but I feel this addition would make it amazing!)
  • 1/4 cup dark chocolate chips definitely use if not icing
  • 1/4 cup pecan pieces

Cashew Icing

  • 1/2 cup raw cashews soak 2 hours in water or 30 min in boiled water
  • 1 1/2 tbsp almond milk or other milk
  • 1 tbsp maple syrup
  • 1/4 tsp pure vanilla extract optional

Instructions
 

Making the COOKIES!

  • Preheat oven at 350F.

  • Mix dry ingredients together.
  • Mix wet ingredients together in a separate bowl from dry ingredients.
  • Mix wet and dry ingredients together.
  • Using spoon and spatula or a medium cookie scoop - drop cookie dough onto parchment paper that is placed on a large cookie sheet. (No parchment paper then butter or oil the cookie sheet then sprinkle gluten free flour over.)

  • Bake @ 350F for 8-12 min depending where you live. My were ready at 10 min on parchment paper.

Cashew Icing

  • In blendtec wildside or nutri-bullet mix all ingredients together. Use a spatula to get off sides and repeat.

  • I let people put there own cashew icing on or put it on just before the event so the cookies.
  • You can freeze the cookies then thaw them for 10-20 min. I have done this with just the cookies then made the icing.
