Happy Easter everyone!

Almond Butter Eggs! = Healthy Reeces butter cups without refined sugar!!! These healthy peanut butter cups, are even better with almond butter. Healthy for you Easter eggs!!!

They are simple with 5 main ingredients – almond butter, almond flour, maple syrup, dark chocolate chips, coconut oil! With a few pinches of Himalayan Pink Sea Salt here and there. These are plenty sweet without the high fructose corn syrup.

Almond Easter Eggs! = Healthy Reeces Butter cups

These are healthy peanut butter cups, actually healthier if you use almond butter!! These are powerhouse of energy and goodness. Dark chocolate chips have magnesium in them, Maple syrup has lots of minerals, vitamins and antioxidants, almonds are so healthy full of fats, fiber and protein, coconut oil has antimicrobial and Himalayan sea salt is beautiful and full of minerals!

Servings 11 eggs (balls)

Ingredients
  

  • 1/2 cup almond butter smooth
  • 1/3 cup almond flour or meal
  • 2 pinches sea or himalayan salt
  • 3/4 tbsp maple syrup Needed to bind and form the balls. If you want less sweet. Try Chia egg to help it bind - use the suggested amount of maple syrup as water, then add 1/3 ratio of ground chia seeds. Let it set for 5 minutes then add instead of maple syrup.
  • 1/2 cup dark chocolate chips Enjoy Life! Brand are amazing!
  • 2 tsp Coconut Oil
  • 4 pinches sea or himalayan salt

Instructions
 

The creamy middle!

  • In a small bowl mix almond butter, almond flour, first mentioned sea salt, and maple syrup.
  • Scoop onto a cookie sheet (with parchment paper).
  • Put in freezer on the cookie sheet for 20 to 40 minutes.

The Dark Chocolate Goodness!

  • Start a small pot of 1.5-2 cups of water boiling.
  • In a small glass Pyrex measuring cup put the dark chocolate and coconut oil.
  • Place the Pyrex measuring cup in the boiling water pot as a double boiler. Stir while it is melting. (Another option is to use the microwave if you like).
  • Once melted add the last salt amount in the ingredients.
  • Take the balls out of the freezer and drop one at a time into the Pyrex measuring cup and rotate the ball or use a spoon to cover it with chocolate. Take it out and place it back on the parchment paper. Do this for each ball.
  • OPTIONAL: Then using the spoon drizzle the last bit of chocolate by moving your spoon quickly over the balls to give it an additional trace or line appearance.
  • Sprinkle with Himalayan salt. Put back in Freezer. Store in freezer till you want to eat them. Enjoy and Happy Easter!!
