Easy Sugar Free Rhubarb Custard Pie

You’ve got this! A simple dairy free custard that’s so divine! The crust is the hardest part for your Easy Sugar Free Rhubarb Custard Pie. Choose your crust – Pecan or Homemade Gluten-free Pie Crust or buy your crust. You can also make the crust a day or more earlier.
When I lived in Holland with my Aunt Lia and family we had custard alot! I loved it! It was very common to eat custard with breakfast or as a dessert. It came in glass bottles and was divine.
So Gluten-free pie crust meets divine custard with rhubarb. The amazing thing about this recipe is that typically rhubarb recipes have sugar in them to cam the rhubarb bitterness. This one has naturally sweetened with a bit of maple syrup.
This is a great recipe to get use to making – so you can use it for breakfast with granola and yogurt, add fruit and nuts as a snack or dessert, ALONE!!! As a Cake filler between the layers, next week I share an amazing Rhubarb Custard Pie that’s a way to make rhubarb without the sugar.

Easy Sugar Free Rhubarb Custard Pie
Ingredients
Make Gluten Free Pie Crust. Pecan or Plain – Bake for 10 min at 350.
- 3 cups ~ 1/4 " or 1 cm slices of rhubarb OR /and Berries
- 2 tbsp gluten-free flour
Custard Recipe Same as previous custard. Simpler – just mix all ingredients in bowl, pour over rhubarb or/ and berries.
Custard Recipe Below (is doubled for 10 or 9 inch pie pan, for 8inch pie pan use 1/2 the recipe.)
MIX all ingredients into a bowl
- 3 tbsp butter or Earth Balance butter
- 6 tbsp arrowroot flour
- 1 can coconut milk 2 cups = 1 can
- 2 large egg yolks
- 2 large eggs use only egg yolks if you want it more yellow.
- 2 tsp vanilla
- 6 tbsp lemon juice 1-2 lemons squeezed
- 1 tsp lemon rind
- 2 pinches sea salt or Himalayan salt
- 2 tbsp maple syrup
Instructions
- Mix all Custard items together with a whisk in a large bowl.
- Slice rhubarb, place in a small bowl and stir gluten-free flour onto. This step is optional. You can use berries too! Upto 3 cups for rhubarb and berries.
- Put rhubarb and / or berries into the pie crust.
- Pour Custard ontop till pie crust is filled. You make have extra – pour the remainder into a small ramekin and bake with the cake.
- Bake for 50 min at 350oF or 180 oC. Let chill for 2 hours.
