This is a easy gluten-free meatloaf without breadcrumbs that is packed with nutrients from grass-fed lean ground beef, shredded carrots and zucchini, almond flour, eggs (can use flax eggs). As well as, sulfur containing garlic and onions that help our body detox.

I added Green chiles cause my husband loves them! This is optional but so worth trying Green Chiles! We love them and add them in lots of food to add that spicy but great taste of green chiles.

Easy Gluten-free Meatloaf without breadcrumbs

Try this moist gluten-free meatloaf with lots of veggies. Gluten-free is by using almond flour instead of bread crumbs.
Option of two sauces. Take your pick
I always transfer from the cooking pan to a covered pan cause we try to keep our oven clean. This is just an option. The transfer is not required.

Ingredients
  

Preheat oven at 350oF

In a large bowl add all ingredients including spices and optional green chiles. MIX by hand

  • 2 lb ground beef
  • 1/2 cup almond flour
  • 2 eggs
  • 1/2 onion diced – finely ~3/4 cup
  • 1/2 cup carrots grated ~1 large carrot
  • 1/2 cup zucchini grated- less than 1 zucchini
  • 3 cloves garlic minced

SPICES

  • 2 tsp fennel
  • 1 tsp sea salt or himalayan salt
  • 2 tsp oregano
  • 2 tsp cumin
  • 2 tsp ground coriander seed optional

Additional tang!

  • 1 can green chiles 7oz – optional but great

PICK YOUR SAUCE – Sauces made when Meatloaf is baking for the first 30 min.

Sauce #1 – smooth sauce

  • 1/2 onion diced – finely ~1/2 to 3/4 cup
  • 2 cloves garlic minced
  • 1 can tomato sauce 14,5 oz
  • 2 tbsp water rinse can and put into sauce
  • 2 tsp paprika
  • 1 tsp Dijon mustard
  • 2 tsp coconut aminos

Sauce #2 – chucky sauce with spice!

  • 1/2 tsp cinammon
  • 2 cloves garlic minced
  • 1/2 onion diced – finely ~1/2 – 3/4 cup
  • 1 can diced tomatoes 14.5 oz.
  • 2 tbsp water rinse can with water and put into sauce
  • 2 tsp balsamic vinegar
  • 1/4 tsp smoked paprika
  • 1/4 tsp clove

Instructions
 

Meatloaf. Preheat oven at 350oF (180oC).

  • Mix all ingredients into a large bowl.
  • Choice your pan – mini loaf or bread loaf.
  • Oil your pan with avocado oil or other oil, use a brush or fingers to disperse it on your cooking pan.
  • Form meat into loaf size. Leave space on top, for meat fat to stay in the container and not onto your oven.
  • Bake for 30 min at 350oF (180oC) for loaf pan, 15-20 min for mini loaf.

Sauce

  • In pan on stovetop over medium heat, add avocado oil or a little water and add onions. Saute 3-5 min till translucent. Add garlic.
  • Add diced tomato or tomato sauce (chucky or smooth). Rinse can with small amount of water and add to sauce.
  • Add flavor of sauce #1 or sauce #2.
  • Let it come to a boil then simmer with lid on for remainder of time that the meatloaf is in the oven

Add Sauce to Meatloaf

  • Here I transfer my meatloaf to a covered pan, to decrease the mess in my oven. and add sauce. This is optional.
  • 2nd option -is to brush sauce onto the top of meatloaf. Keep remainder of sauce on stovetop (reheat when serving).
  • BAKE AGAIN – Bake for 30 min at 350oF (180oC) for loaf pan, 15-20 min for mini loaf.
  • ENJOY!
