Chocolate Bird’s Nest Cookie can be filled with pistachio eggs or you can use easter small eggs. 

These are healthy yet satisfy that chocolate craving. Very fast to make.  Freeze to set and you can store in freezer for 3 months or fridge for 20 days.

How to store Chocolate Bird Nest Cookie

Store in freezer in an airtight container for upto 3 months. Best stored shorter to reduce freezer burn. Take it out and decorate while frozen. Serve around 20 minutes after freezer or directly out of freezer if you like cold treat. Can store in fridge for 20 days in an air tight container.

Chocolate Bird’s Nest Cookie

Perfect for Easter, Spring or a party. You can switch the pistachios for cadbury mini chocolate eggs.
These are easy – no bake, easy cookies. that are gluten-free, dairy-free with dark chocolate and vegan. Everyone can enjoy!

Servings 13 pieces

Ingredients
  

Bird's Nest

  • 1/2 cup almond butter or peanut butter
  • 2 tbsp maple syrup or honey (non-vegan)
  • 1 tsp pure vanilla extract
  • 2 tbsp cocoa poweder or cacao powder
  • 1/4 tsp sea salt or himalayan salt

Mix together in medium size bowl.

  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup pecans pieces

Mix.

  • 1/2 cup puffed rice (krispies) for keto or paleo, replace with nut pieces.

Gently mix.

  • 1/4 cup pistachios or Cadbury mini eggs (not dairyfree)

Instructions
 

  • Mix nut butter, maple syrup or honey, vanilla, cocoa powder and salt together in a medium size bowls.
  • Mix in unsweetened shredded coconut and pecan pieces.
  • Gently mix in puffed rice (rice krispies).
  • Create by hand bird nests. Then add pistachios or Cadbury mini eggs in the middle of the nest and gently push in. Then Freeze on cookie sheet (can use parchment sheet).
  • Transfer to a closed air container. Keep in freezer for 3 months or fridge for 20-30 days.
