Quick Chicken Broccoli Mushroom Dinner is a FAST Dinner – this is one we make often. I love making dinners that you prepare within 10 min then throw it in the oven for fast dinner. This is Paleo, gluten-free, dairyfree, and keto friendly.
Nutritional Yeast!
Please if you like cheesy taste, want more vitamin B and are looking for fast meals. Add Nutritional Yeast to your diet. “One tablespoon of nutritional yeast provides about 5 grams of protein, 2 grams of fiber, and only 3 grams of carbohydrate. It is an excellent source of B vitamins like niacin and B12, important for cellular energy production. And despite being a flavorful source of umami flavoring, it’s low in sodium.” Reference- University of Healthy Center – Georgia.
Why I love Oven meals – WORKOUT TIME
While it’s in the oven I do my Essentrics workout or yoga for 20 to 30 minutes. If it’s a longer meal – I can walk around the block. Essentrics is a great movement workout that can help ease pain and help create flexibility, and it was created by a Montreal previous dancer. It really is lovely – and she has free workouts you can try on youtube. Yoga – I follow Bryan Kest Power Yoga, love his and his colleagues workouts. I like to get in a workout in the morning before work, during cooking!, lunch break, anytime I can.

YumQuick Chicken Broccoli Mushroom Dinner
Ingredients
- 4 chicken thighs or 8
- 1 broccoli crown – cut into florets
- 9 medium bella mushrooms larger chunks
- 3 tbsp nutritional yeast
- 1 tbsp avocado oil
- salt and pepper to taste
Instructions
- Preheat oven 400 F (200C).
- Saute chicken in large dutch oven, large cast iron skillet or frying pan. 5 minutes each side.
- While frying, cut broccoli into florets and mushrooms into chunks.
- Take chicken out of pan or to side. Place broccoli and mushrooms in.
- Shake on lots of nutritional yeast, add salt and pepper.
- Put lid on and put in oven for 20 min- check and if needed continue for another 5 min.
