Saturday morning request from my sweetheart. A great Valentine’s gift! Blueberry buckwheat pancakes please!   These are so good, buckwheat is gluten-free, grain-free, no wheat! and fiber dense, with good nutrients and protein! 

This is a special week – my cousin, Colleen is visiting and we will be celebrating our birthdays together like old times!  I consider myself so lucky for having so many amazing, fun and close cousins. Yippee.

Depending how strict – could be paleo or keto. 

This recipe is simple and so good – my husband doesn’t like pancakes cause of the carbs yet loves these. You feel great after eating them cause of the nutrients and fiber.  

I love to add yogurt, butter or coconut butter, granola and maple syrup to my pancakes – how do you like your pancakes, let me know in the comments.

Which diet is this Blueberry Buckwheat Pancakes are suitable for?

Vegan – Yes – if you use vegan egg substitute – I haven’t tried this – do let me know how it works in the comments. thanks!

Gluten-free – Yes

Dairy-free – Yes – used alternative milk.

Egg-free  – No, I used lots of eggs.  You could try with vegan egg substitute. 

Nut-free – Yes

Paleo and Keto friendly – depends how strict you are.

How to store Blueberry Buckwheat Pancakes

Can store in air-tight container in fridge for 5 days – I like to toast my in the toaster.  

You can make half the pancakes on Saturday morning and half on Sunday! That’s what we do.  The pancake mix stays good in the fridge for upto 2-3 days.

Pair this with:

Easy Dairy Free CUSTARD! – this would be amazing on the side with these pancakes – yes please!

Coconut Yogurt Cream – on the side!

Easy Whipped Feta Dip – drop the Mediterranean toppings. And just add the Easy Whipped Feta Dip as a topping options.

Sourdough Montreal style Bagels – for additional breakfast ideas.

Zucchini Fries with Siracha Aioli sauce

Creamy Potato Salad

Many additional Topping ideas in the recipe. Add plain yogurt and cottage cheese or Easy Whipped Feta Dip. ENJOY!

How to make this Blueberry Buckwheat Pancakes fool proof?

Mix the dry ingredients together. Then add all wet ingredients except milk. Mix together. Slowly add the milk and whisk till you have the consistency you like in your pancake batter.

Blueberry Buckwheat Pancakes

Lively Life
Gluten-free, grain-free, dairy-free. Full of fiber, protein and blueberries!
I love to buy frozen berries to use all year long – they are frozen at their peak. These wild blueberries are amazing, small and full of phytonutrients and anti-oxidants.

Prep Time 10 minutes
Cook Time 20 minutes
Course Breakfast
Servings 4 people

Equipment

  • 1 staub frying pan

Ingredients
  

Mix dry ingredients

  • 1 cup buckwheat flour
  • 1 pinch sea salt or himalayan salt
  • 2 tbsp ground seeds (optional) chia, flaxseed, hemp

Whisk these ingredients with dry ingredients

  • 4 eggs
  • 1 tbsp maple syrup
  • 1 tsp vanilla

Last add alternative milk till consistency you like.

  • 1 cup almond milk or other alternative

Add Blueberries

  • 1/2 cup frozen wild blueberries

Instructions
 

  • Preheat griddle or stove with frying pan.
  • Whisk 4 eggs, maple syrup and vanilla with buckwheat flour, optional grounded seeds, and salt.
  • Whisk in milk till consistency you like.
  • Add blueberries and mix.
  • Add avocado oil and butter to pan or griddle. Pour batter. Fry, flip and fry.
  • Enjoy with butter, coconut butter, maple syrup, honey, yogurt (dairy-free or plain yogurt) and granola.
