Sometimes one just feels like eating Egg Salad like when you were young. Here is a simple and easy recipe – Lively Life’s Best Egg Salad that mixes many of our comfort foods in with a new twist of tomatoes and capers. 

Mayonnaise – please start to look for Mayonnaise with avocado oil or olive oil (healthy fats) and  buy full fat not light! Eat Mayonnaise in small amounts since its high calories. 

WHY NOT CANOLA OIL? normal Mayonnaise is typically canola oil (Rapeseed oil  – Vegetable oil) that is GMO, most is extracted with a hexane solvent and the heat turns is rancid, destroys omega-3s and creates trans fats. This causes inflammation. There is “cold-pressed” canola oil that is expensive and not used in mayonnaise.

WHY NOT LIGHT? Light Mayonnaise  often contains added sugar or carbs to maintain texture, and additives like food starch, gums and others not found in regular mayonnaise.

Vegan – You can buy plant-based or vegan mayo instead of regular mayo.

Best Egg Salad

Lively Life
Creamy, awesome egg salad for picnics or delicious sandwiches.
Enjoy – it gets even better I think, after a day or two in the fridge.

Ingredients
  

  • 6 large eggs Boil for 10 min
  • 1/4 cup mayonnaise I like Mayo with Olive Oil (not canola oil that is typically GMO)
  • 1 tbsp dijon mustard
  • 1/4 cup red onion diced
  • 1/4 cup celery thinly diced
  • 2 tsp capers diced
  • 1 tsp lemon juice or ACV- apple cider vinegar or other vinegar
  • 1/4 cup tomatoes diced
  • 1/4 tsp sea salt or himalayan salt
  • 1/4 tsp paprika or pepper

Instructions
 

  • Boil 6 eggs for 10 min.
  • Dice red onion, celery, tomatoes and capers.
  • Once eggs are ready, ran cold water over them, then peel eggs. Slice every which way.
  • Mix all ingredients together in medium bowl. ENJOY! Plain, on leafy green salad, salad leaf wraps, wraps or on sandwiches.
  • For a sandwich or wrap – add avocado, lettuce, cucumber, sprouts.
