Almond/ Peanut Butter Cookies: Healthy Cookie Using Almond Flour!

Try this cookie that won’t cause a blood sugar crush!

So easy and filled with good fats and protein that satisfies your food cravings. Almond/ Peanut Butter cookie is not very sweet. Add a little chocolate for sweetness if you like, and you have a great easy cookie. 4 Main ingredients + salt and chocolate!

The secret with this one is using almond flour, allows us to reduce almond butter or peanut butter amount, and these are so delicious they won’t last long. My husband who doesn’t like sweets, or cookies, loves these! I think it’s cause they are full of nutrients, protein and good fats.

How to select your nut butter

Select nut butter that has only one ingredient: “almonds” or “peanuts” (and maybe a pinch of salt). You can even make your own in a food processor. Almond butter has more fiber (3.3 g compared to 1.6 g/ 2tbsp), as well as more vitamins and minerals (3 x vitamin D, 7x calcium, 2 x iron! Peanut butter has these nutrients too, just not as much. Both have magnesium, zinc – my two favorites, as well as biotin and potassium. Peanut butter has more protein!

I typically choose almonds over peanuts, cause when I’m doing my spring or fall cleanse, I want to reduce the chance of toxins. Peanuts can have mold (fungus) known as Afltoxins depending on quality of peanut butter.

How to store these Cookies!

If only storing these Almond/ peanut butter cookies was an issue. They will be long gone before storage is required. If you set them out on your kitchen counter (5 days)!

You can freeze these for 3 months.

Almond Butter Cookies – 4 ingredients (Peanut Butter Cookies)

Almond/ Peanut Butter Cookies: Healthy Cookie Using Almond Flour!

Add a little chocolate for sweetness and you have a great easy cookie.
These won't last long.

Ingredients
  

Preheat oven at 350oF (180oC)

  • 1/3 cup almond butter
  • 1 egg or flax egg for vegan
  • 2 cups almond flour
  • 3 tbsp honey or maple syrup
  • 1/2 tsp salt Optional – if you like salt! You could use 1 tsp if you really like salt! In mix and pinch of salt sprinkled on top.

Mix. Roll dough into small balls place on parchment paper, then wet a fork and press down

Optional – to sprinkle salt flakes or salt – but be careful. That's why I gave the option above of adding salt directly in the cookie!

Bake for 10-12 min at 350oF (180oC)

CHOCOLATE

  • 2 tbsp dark chocolate chips I like Enjoy Life brand

Use a double boil method or microwave for 1 min – and stir. Use a spoon or knife to put chocolate on one half like dipped or lines. See pics.
